One of the more fascinating backstories around - Jokichi Takamine, a Japanese chemist (who did postgraduate work in Scotland) the first person to synthesize adrenaline, the man responsible for the gift of cherry blossom trees to Washington D.C., and also the inventor of an enzyme based on koji (of sake fermenting fame) that breaks down other starches. His dream was to use it to make Japanese whiskey - a feat that was deemed too risque and untraditional to try in his day (which, to be fair, was about 120 years ago). Today, a company has finally utilized the process for the first time commercially, resulting in a bright and flavorful whiskey that is one of a kind. Tasting notes: The nose showcases a mixture of fruitiness and richness, with Bing cherries and green apples for the former, and dark chocolate and cocoa powder for the latter. The palate has a dark, earthy quality with soil and mushrooms, and fermented notes ranging from whole coffee beans to cigar wrappers. In the back, there's oak and rooibos tea. The finish showcases asphalt, pecan shells and sprouted cereal grains.
