A one-off ode to Chartreuse with a recipe that distiller Patrick Miller intends to pass portions to two trusted associates (so that upon his passing, no one person will ever know the entire recipe). "Centerbe" means "a hundred herbs" in Italian and is a style of botanical amaro found in Abruzzo. Patrick's version is very much inspired by Chartreuse, with botanicals like hyssop, mint, thyme, tarragon, coriander, dittany, lemon balm, and fennel are macerated in neutral grain spirits, and fresh herbs added at the end for color as well. Herbaceous and lightly bitter, this is the first amaro of this style to be made in New York. made with half dried herbs macerated for a week in non-GMO GNS, and half fresh ones, added in for an overnight maceration to extract color and maintain freshness.
