Le Rocher is subjected to a fermentation similar to the Grand Arome rums (think Rum Fire, Rivers Royale) in that the residues (stills) of the end of distillation are left in the pot for the next fermentation. And like the Rivers, the complex flavors go down deep on this one: citrus peel, tangy barbeque, fresh pine and smoke. On the palate, ripe papaya, chewing gum and earth. Buttercream, burnt caramel and roasted meat on the finish.
